Saucy Alligator Casserole
- 1/2 c. butter, divided
- 1 lb. alligator fillet
- 1/2 c. chopped onion
- 1/2 c. chopped bell pepper
- 1/2 c. diced celery
- 1/2 tsp. garlic powder
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 2 c. cooked rice
- 1 c. salsa
- 2 oz. grated cheese
- 1 c. cracker crumbs
- Melt 1/4 cup butter in a large size skillet.
- Add alligator to skillet in 1-inch pieces.
- Brown lightly.
- Add onion, bell pepper and celery.
- Saute vegetables until tender-crisp.
- Add garlic powder, salt and black pepper.
- Mix well.
- Add rice and salsa; stir until well blended.
- Pour into 2-quart casserole dish. Sprinkle with grated cheese.
- Mix cracker crumbs with 1/4 cup butter and spread over top of casserole.
- Bake 20 minutes in oven at 400u0b0.
- Serves 6.
