Saucy Alligator Casserole

  1. Melt 1/4 cup butter in a large size skillet.
  2. Add alligator to skillet in 1-inch pieces.
  3. Brown lightly.
  4. Add onion, bell pepper and celery.
  5. Saute vegetables until tender-crisp.
  6. Add garlic powder, salt and black pepper.
  7. Mix well.
  8. Add rice and salsa; stir until well blended.
  9. Pour into 2-quart casserole dish. Sprinkle with grated cheese.
  10. Mix cracker crumbs with 1/4 cup butter and spread over top of casserole.
  11. Bake 20 minutes in oven at 400u0b0.
  12. Serves 6.
