robinmay's chicken in wine

  1. add chicken to a large pot
  2. cover chicken with wine
  3. add onions, garlic, salt, and pepper
  4. cook on high until you get the mixture boiling
  5. boil for 5 min then reduce the heat and simmer for 45 min
  6. after 45 minutes remove one cup of the cooking liquid and add the cornstarch to it.
  7. stir till mixed
  8. add the mixture back to the pot and stir in
  9. let thicken for a few minutes..if you would like it thicker repeat the last step till it thickens up a bit..season with salt to taste
  10. serve over white rice with lots of the broth
  11. **the chicken will be a deep burgundy color because of the wine but it is absolutely delicious!
