robinmay's chicken in wine
- 3 clove garlic minced
- 1 sweet onion chopped
- 1 bottle burgandy wine
- 1 white rice to serve over
- 1 salt and pepper to taste
- 1 packages chicken thighs skin removed (you may use one whole chicken cut up also)
- 3 tbsp cornstarch (or a little more)
- add chicken to a large pot
- cover chicken with wine
- add onions, garlic, salt, and pepper
- cook on high until you get the mixture boiling
- boil for 5 min then reduce the heat and simmer for 45 min
- after 45 minutes remove one cup of the cooking liquid and add the cornstarch to it.
- stir till mixed
- add the mixture back to the pot and stir in
- let thicken for a few minutes..if you would like it thicker repeat the last step till it thickens up a bit..season with salt to taste
- serve over white rice with lots of the broth
- **the chicken will be a deep burgundy color because of the wine but it is absolutely delicious!
