Butter Sponge For French Pastry Recipe
- 1 x Egg
- 3 x Egg yolks
- 3 1/2 Tbsp. Melted butter
- 6 Tbsp. Flour
- 1 tsp Grated lemon rind
- 2 1/4 Tbsp. Cornstarch
- 1 tsp Baking pwdr
- 1/3 c. Sugar
- 1 Tbsp. Lemon juice
- 1/8 tsp Salt
- Combine Large eggs and sugar.
- Heat over warm water, beating constantly till hot
- (95 F).
- Remove from fire and beat till cold and stiff.
- Add in flour that has been sifted, measured, and sifted with cornstarch, salt, and baking pwdr.
- Mix as lightly as possible.
- Add in lemon juice and rind.
- Add in butter slowly, stirring constantly.
- Pour into well-oiled pan.
- Bake in moderate oven (375 F) about 20 min.
- When cold cut into various shapes.
- Ice with different colored icing.
- Decorate with fancy designs of contrasting colors.
