Brunch Enchiladas Recipe

  1. Saute/fry ham and onion in extra virgin olive oil.
  2. Add in Large eggs and scramble.
  3. In small pan, heat butter and whisk in flour.
  4. Slowly add in lowfat milk while whisking.
  5. Heat till thickened and bubbly.
  6. Salt and pepper to taste.
  7. Heat tortillas on a griddle till soft and pliable, but don't allow to harden.
  8. Divide the egg mix into three tortillas and roll.
  9. Pour the white sauce over and top with cheese.
  10. Serve with salsa on the side.
