  2. Put the sweet Italian sausage in a skillet with the water.
  3. Cover and cook on medium-low heat for 10 minutes.
  4. After 10 minutes, turn the sausage over and cook for another 10 minutes uncovered after poking a few holes in the sausages.

  6. While the sausage is cooking, cut the ends off the onion, but that is it.
  7. Add the whole onion into the sauce.
  8. 3.
  9. Pour the tomato juice into a large pot and then stir in the tomato paste.
  10. 4.
  11. Stir in oregano, black pepper and garlic powder to taste.
  12. I usually start with a tablespoon of oregano and garlic powder, 1/2 tablespoon of black pepper, and then adjust while cooking.
  13. 5.
  14. Once the sausage is done cooking, add it to the sauce.
  15. 6.
  16. Simmer for an hour and then store in the fridge until the next day.
  17. 7.
  18. The next day, heat the sauce on low for 2-3 hours.
  19. This makes enough for 2 dinners.
  20. We usually refrigerate or freeze the remaining sauce and add more sausage to it the next week.
