Pork Salad Waldorf Recipe
- 1/2 c. mayonnaise
- 2 c. celery, julienne cut, blanched
- 2 lg. apples
- 1/2 c. walnuts
- 1/2 teaspoon Worcestershire sauce
- 24 ounce. pork, cooked, diced
- 1/2 teaspoon Dijon mustard
- 1 parsley sprig
- 1/2 lemon
- 1 head Boston Bibb lettuce
- Salt
- Pepper
- 3 cranberries, fresh
- Peel and core the apples and dice into 1/2-inch cubes and place in mixing bowl.
- Add in celery and lemon juice and mix well.
- Add in the pork, Dijon mustard, salt and pepper to taste, walnuts, Worcestershire sauce, and mix well.
- Add in the mayonnaise and gently fold everything together.
- Transfer to a serving bowl and garnish with parsley sprig, cranberries, and sprinkle with walnuts.
- Serve on a bed of Bibb lettuce.
