Southern Living'S Chocolate Date Bars
- 1 (8 oz.) pkg. dates, chopped
- 3/4 c. firmly packed brown sugar
- 1/2 c. water
- 1/2 c. butter or oleo
- 1 (6 oz.) pkg. semi-sweet chocolate bits
- 2 eggs
- 1 1/4 c. all-purpose flour, sifted
- 3/4 tsp. soda
- 1/2 tsp. salt
- 1/3 c. orange juice
- 1/4 c. milk or cream
- 1 c. broken walnuts
- Combine dates, sugar, water and oleo in large saucepan.
- Cook over low heat.
- Stir constantly until dates soften.
- Remove from heat; stir in chocolate until melted.
- Beat in eggs.
- Sift flour with soda and salt.
- Add to mixture alternately with orange juice, then milk, blending well.
- Stir in nuts and turn into well-greased 15 x 10-inch pan.
- Bake at 350u0b0 for 25 minutes or just until cake tests done.
- Cool for 5 minutes, then spread with Orange Glaze. Let cake finish cooling after glazing.
- While still warm, use a sharp knife to cut into 1 x 1 1/2-inch bars.
- Remove from pan when cool.
- Freezes beautifully.
- Yield:
- 56 bars.
