Deluxe Chocolate Marshmallow Bars
- 3/4 cup margarine, softened
- 3 egg whites, whipped
- 2 tsp. vanilla
- 1-1/2 cup granulated sugar
- 1-1/3 cup unbleached flour
- 1/2 tsp. baking powder
- 3 tbsp. cocoa powder
- 3 cups miniature marshmallows
- 1 cup semisweet chocolate chips, melted
- 1 tbsp. margarine, melted
- 1/2 cup peanut butter
- 1 cup crispy rice cereal
- Prehat oven to 350F.
- Prepare a 9x9x2-inch baking pan with cooking spray and flour.
- To prepare batter, combine margarine, egg whites, and vanilla in a mixing bowl.
- In another mixing bowl, combine sugar, flour, baking powder, and cocoa powder.
- Spread in prepared pan.
- Bake for 15 minutes.
- Sprinkle marshmallows evenly over baked batter; return to oven for 3 minutes.
- Using a knife dipped in water, spread the melted marshmallows evenly over cake.
- Cool.
- To prepare topping, combine chocolate chips, margarine, and peanut butter in a saucepan.
- Cook over low heat, stirring constantly, until melted and well blended.
- Remove from heat and stir in cereal.
- Spread over bars.
- Chill.
