Sweet and Sour Pearls (Onions)
- 8 cups white pearl onions (4 10 oz packages)
- 1 teaspoon orange rind, grated
- 1 bay leaf
- 1 cup water
- 1 cup raisins
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon tomato paste
- 12 teaspoon salt
- 14 teaspoon pepper
- 1 garlic clove, slivered
- 1 tablespoon cornstarch
- 2 tablespoons water
- Cover onions with boiling water in a heatproof bowl and let stand for 30 seconds.
- Drain and peel.
- Combine onions, orange rind, bay leaf, 1 cup water, raisins, oil, vinegar, tomato paste, salt, pepper and garlic in slow cooker (slow cooker should be 1/2 to 3/4 full).
- Cover and cook on low for 6 hours or until onions are tender.
- Discard bay leaf.
- Mix cornstarch with 2 tbsp water and stir into slow cooker.
- Cover and cook on high for 10 minutes or until thickened.
