Chicken & Broccoli & Rice Recipe
- 1 1/2 c. water
- 1 1/2 c. dry Minute Premium long grain rice
- 1 pound boned chicken breasts, cut into strips
- 2 tbsp. oil
- 1 can (10 3/4 ounce.) Campbell's condensed cream of chicken soup
- 1/2 can lowfat milk
- 2 tbsp. Dijon-style mustard or possibly prepared mustard
- 1/2 c. cheddar or possibly Swiss cheese, grated
- 1 1/2 c. frzn broccoli cuts, thawed
- 2 tbsp. minced pimento
- Bring water to a boil.
- Stir in rice.
- Cover and remove from heat.
- Let stand 5 min or possibly till all water is absorbed.
- Meanwhile, cook and stir chicken in warm oil till lightly browned.
- Stir in soup, lowfat milk, mustard and cheese.
- Add in broccoli and pimento.
- Bring to a full boil.
- Reduce heat and simmer 2 min.
- Pour over rice.
- Makes 4 servings.
