Apricot Nut Bread
- 1 1/4 c. dried apricots
- 2 1/2 c. all-purpose flour
- 3 tsp. baking powder
- 1 tsp. salt
- 1/2 tsp. baking soda
- 1/4 c. blanched almonds, chopped
- 1/4 c. walnuts or filberts, chopped
- 1/4 c. flaked coconut
- 2 eggs
- 3/4 c. sugar
- 3 Tbsp. butter, melted
- 1/2 c. reserved water from soaking apricots or 3/4 c. warm water
- 1/2 c. canned coconut milk
- 1 Tbsp. grated lemon rind
- 1 Tbsp. lemon juice
- Soak apricots in water to cover for 2 hours or until soft. If there is excess water, reserve 1/2 cup.
- Roughly chop the apricots and set aside.
- (Chopping the apricots first, then soaking them is easier.)
- Using a large bowl, combine the flour, baking powder, salt and baking soda; sift 3 times.
- This is to mix all the dry ingredients evenly.
- Stir in the nuts and set aside.
