Tomato, Corn, and Avocado Salad
- 1 ear corn
- 2 pt. cherry, grape, or pear tomatoes
- 1 avocado
- 2 scallions
- 2 tbsp. fresh lime juice
- 1 tbsp. vegetable oil
- Coarse salt
- ground pepper
- Stand the ear of corn in a large wide bowl.
- With a sharp knife, carefully slice downward to release the kernels.
- Discard the cob.
- Add the tomatoes, avocado, scallions, lime juice, and oil to the bowl.
