Memorable Mocha Cake
- 3/4 cup butter or margarine
- 1-1/2 pkg. (4 oz. each) BAKER'S Semi-Sweet Chocolate (6 oz.)
- 2-1/2 cups flour
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1-1/2 cups sugar
- 3 eggs
- 2 tsp. vanilla
- 1-1/2 cups brewed strong MAXWELL HOUSE Coffee, cooled Walgreens $6.99 thru 02/06
- Coconut-Pecan Frosting
- Heat oven to 350F.
- Grease and flour 13x9-inch pan.
- Microwave butter and chocolate in large microwaveable bowl on HIGH 2 min.
- or until butter is melted; stir until chocolate is completely melted and mixture is well blended.
- Combine flour, baking soda and salt.
- Add sugar to chocolate mixture; beat with mixer until blended.
- Beat in eggs, 1 at a time.
- Blend in vanilla.
- Add flour mixture alternately with coffee, mixing well after each addition.
- Pour into prepared pan.
- Bake 40 to 45 min.
- or until toothpick inserted in center comes out clean.
- Cool completely.
- Prepare Coconut-Pecan Frosting; spread onto cake.
