Sausage-Noodle Casserole
- 1 lb. sausage
- 1 medium onion, chopped
- 1/2 green pepper, chopped
- 1 (14 oz.) can Mexican tomatoes or stewed tomatoes
- 1 (12 oz.) can tomato sauce
- 1/2 c. water
- 1 tsp. chili powder
- 1 tsp. salt
- 1 tsp. sugar
- 1 tsp. dry mustard (optional)
- 8 oz. sour cream
- 12 oz. egg noodles, cooked and drained
- 1 c. Cheddar cheese, grated
- Brown sausage in a large skillet and drain.
- Remove sausage to drain on paper towel lined plate.
- Pour all but a small amount of grease from skillet and saute onion and green pepper.
- Add tomatoes, water, meat and spices.
- Simmer sauce for 15 to 20 minutes while cooking egg noodles.
- Drain noodles; return to pot and stir in sour cream.
- Pour half of sauce in bottom of a 13 x 9-inch dish.
- Add noodles and rest of sauce.
- Top with cheese and bake at 350u0b0 for 30 minutes.
