Smoky Tater Casserole
- 4 c. frozen hash brown potatoes
- 1 (15 oz.) can cream-style corn
- 3/4 c. milk
- 8 oz. cooked smoked sausage, cut into 1/2-inch pieces
- 1 medium onion, chopped
- 1/2 c. chopped green pepper
- 1/8 tsp. pepper
- 1 c. (4 oz.) shredded Cheddar cheese
- Combine potatoes and onion in 2-quart microwave-safe casserole.
- Cover with casserole lid.
- Microwave on High for 8 to 9 minutes or until heated through, stirring once.
- Add corn, green pepper, milk and pepper; stir until mixed.
- Add sausage pieces, mixing lightly.
- Cover.
- Microwave on High 5 to 6 minutes or until heated through, stirring once.
- Sprinkle with cheese.
- Let stand, covered, for 5 minutes or until cheese is melted.
- Makes about 6 servings, 325 calories each.
