Pad Thai

  1. Heat oil in a non-stick wok or frying pan over high heat.
  2. Cook onion and garlic until onion is tender.
  3. Add broccolini and capsicum, stir-fry until just tender.
  4. Add stock, peanut spread, sweet chilli sauce and soy sauce.
  5. Stir for 1 minute or until vegetables are coated.
  6. Add cabbage and bean shoots and cook until just wilted.
  7. Toss through noodles until heated through.
  8. Serve immediately.
