Curried Squash Soup
- 1 (10 ounce) packagefrozen pureed winter squash
- 12 cup light coconut milk
- 12 cup water
- 1 (6 ounce) bag Baby Spinach
- 2 teaspoons brown sugar
- 1 teaspoon Thai red curry paste
- 2 teaspoons lime juice
- In medium saucepan, combine squash, coconut milk, water, spinach, brown sugar and curry paste.
- Heat, stirring occasionally, until hot.
- Stir in lime juice.
