Creamy Lemon Squares

  1. Heat oven to 350 degrees F.
  2. Line 8-inch square pan with foil, with ends of foil extending over sides.
  3. Mix wafer crumbs, 1/2 cup flour, and brown sugar in medium bowl.
  4. Cut in margarine with pastry blender or 2 knives until mixture resembles coarse crumbs; press onto bottom of prepared pan.
  5. Bake 15 minutes.
  6. Meanwhile, beat Neufchatel and granulated sugar with mixer until well blended.
  7. Add eggs and 2 tablespoons flour; mix well.
  8. Blend in 1 tablespoon lemon zest, lemon juice, and baking powder; pour over crust.
  9. Bake 25 to 28 minutes or until center is set.
  10. Cool completely.
  11. Refrigerate 2 hours.
  12. Sprinkle with powdered sugar and remaining lemon zest just before serving.Each serving provides: 1g trans fat, 6%DV vitamin A, 2%DV vitamin C, 2%DV calcium, and 4%DV iron.
