Ravioli Lasagna
- 25 ounces frozen cheese ravioli
- 2 large tomatoes, chopped
- 1 small onion, chopped
- 1 garlic clove, minced
- 8 ounces sliced mushrooms
- 8 ounces tomato sauce
- 1 tablespoon chopped fresh basil or 1 teaspoon dried basil
- 14 teaspoon salt
- 14 teaspoon pepper
- 12 cup low-fat ricotta cheese (or use fat free)
- 2 tablespoons reduced fat grated parmesan cheese
- Preheat oven to 325 degrees.
- Cook and drain ravioli as directed on package.
- Cook remaining ingredients except cheeses in large skillet over medium-high heat, about 5 minutes, stirring frequently, until tomatoes are soft.
- Place ravioli in ungreased 8"x8" baking dish.
- Spread ricotta cheese over ravioli.
- Pour tomato sauce over top.
- Sprinkle with Parmesan cheese.
- Bake, uncovered, for about 20 minutes or until hot.
