Whole Wheat Spaghetti W/ Golden Garlic and Herbs
- 12 lb whole wheat spaghetti
- 3 tablespoons olive oil
- 4 large garlic cloves, peeled and chopped
- 1 12 lbs of ripe tomatoes, coarsely chopped
- 34 cup cooked chickpeas
- 2 tablespoons fresh herbs, chopped
- 2 tablespoons kalamata olives, chopped
- Cook spaghetti.
- Saute garlic just until lightly browned.
- Stir in herbs, chickpeas, tomatoes, and olives, simmer 3 - 5 minutes.
- Drain spaghetti, reserve some of the cooking water to thin the sauce if needed.
- Return spaghetti to the pot and add tomato/herb mixture.
- Season with salt and pepper.
