Holiday Cherry Dessert Recipe
- 2 Large eggs
- 1 c. sugar
- 1 teaspoon vanilla extract
- 1 c. all-purpose flour
- 1 teaspoon baking pwdr
- 1/2 teaspoon salt
- 1/2 c. minced pecans or possibly walnuts
- 1 (16 ounce.) can pitted tart cherries
- 3/4 c. sugar
- 2 tbsp. cornstarch
- 1/2 teaspoon almond extract
- Whipped cream or possibly vanilla ice cream
- Beat Large eggs till thick and lemon colored; gradually add in 1 c. sugar, beating well.
- Add in vanilla; mix well.
- Combine flour, baking pwdr, and salt; stir well.
- Add in dry ingredients to egg mix and mix well.
- Stir in pecans.
- Pour 2/3 c. batter into a greased and floured 9-inch square baking pan spreading proportionately.
- Drain cherries, reserving juice.
- Stir cherries into remaining batter.
- Pour batter proportionately over first layer.
- Bake at 350 degrees for 45 to 50 min.
- Cold; cut cake into 3-inch squares.
- Add in water to cherry juice to equal 1 c..
- Combine remaining sugar and cornstarch in a saucepan.
- Stir well.
- Add in cherry juice, stirring well.
- Cook over low heat till clear and thickened.
- Stir in almond extract.
- Serve squares with a dollop of whipped cream or possibly a scoop of ice cream.
- Spoon cherry topping over each serving.
- Yield: 9 servings.
