Cantabria Rustic Custard Squares
- 50 vanilla wafers, crushed, divided
- 3 Tbsp. butter
- 3/4 cup sugar
- 3 eggs
- 1 container (16 oz.) BREAKSTONE'S or KNUDSEN Cottage Cheese
- 1 cup milk
- 1 tsp. grated lemon zest Safeway 4 ct For $5.00 thru 02/09
- 1-1/2 cups thawed COOL WHIP Whipped Topping
- Preheat oven to 375F.
- Grease 8-inch square baking pan; set aside.
- Reserve 3 Tbsp.
- of the crushed wafers; set aside.
- Beat butter and sugar in large bowl with electric mixer on medium speed until well blended.
- Add eggs, 1 at a time, mixing well after each addition.
- Blend in cottage cheese, milk, lemon zest and remaining crushed wafers.
- Pour batter into prepared pan; sprinkle top with reserved 3 Tbsp.
- crushed wafers.
- Bake 45 min.
- or until set.
- Cool 20 min.
- ; serve warm with a dollop of whipped topping or cool completely.
- Sprinkle with additional grated lemon peel, if desired.
