Cantabria Rustic Custard Squares

  1. Preheat oven to 375F.
  2. Grease 8-inch square baking pan; set aside.
  3. Reserve 3 Tbsp.
  4. of the crushed wafers; set aside.
  5. Beat butter and sugar in large bowl with electric mixer on medium speed until well blended.
  6. Add eggs, 1 at a time, mixing well after each addition.
  7. Blend in cottage cheese, milk, lemon zest and remaining crushed wafers.
  8. Pour batter into prepared pan; sprinkle top with reserved 3 Tbsp.
  9. crushed wafers.
  10. Bake 45 min.
  11. or until set.
  12. Cool 20 min.
  13. ; serve warm with a dollop of whipped topping or cool completely.
  14. Sprinkle with additional grated lemon peel, if desired.
