L'Hootz F'Tadjeen
- 1 pound fish fillets cut in chunks
- 1 cup onions sliced
- 1 cup potatoes diced
- 1 cup carrots diced
- 1/2 teaspoon salt
- 1 teaspoon red pepper flakes
- 1 cup tomatoes cubed
- 1/2 teaspoon saffron threads
- 1/2 cup olive oil heated
- 1 each sweet red bell peppers
- Layer all ingredients.
- Pour over the hot oil.
- Top with the pimento.
- Simmer slowly for about 3/4 hour.
- Do not mix.
- Serve: Hot, with drops of lemon juice.
