Bacon Extravaganza Bundles
- 1 pound Ground Pork
- 3 Tablespoons Sweet Baby Ray's Honey BBQ Sauce Plus Extra For Basting
- 1 teaspoon Granulated Garlic
- 1 teaspoon Dried Thyme
- 1 teaspoon Onion Flakes
- 1/2 teaspoons Ground Pepper
- 1/2 cups Rosemary Foccacia Breadcrumbs *I Make My Own*
- 13 slices Thick Cut Bacon, Cut In Half (you'll Need 25 Half Slices Total)
- In a bowl add the all of the ingredients (except bacon) and mix by hand.
- Cut your bacon in half.
- Lay out 4 strips lengthwise and weave 1 strip in the middle to ensure everything holds together well you wouldnt want your meat to fall out, it wouldnt be a bundle then!
- Next, grab a fistful of the meat mixture and form it into a log in the middle of the bacon.
- Roll, and as you roll, wrap the bacon around it to form a long, uniform package.
- Place on a rack over a baking tray.
- Repeat with the remaining bacon and meat mixture.
- Brush some Sweet Baby Rays Honey BBQ sauce over top and place in a preheated oven (375F).
- Bake for 45 minutes.
- Half way through the cook time, baste again with BBQ sauce.
- A few more minutes and this will be passing your drooling lips and into your welcoming stomach!
- Once removed from the oven, let rest 10 minutes
- Make sure you serve this with lots of veggies so you dont feel bad for eating 2 bundles!
