Turkey Fajitas
- 1/2 lb. breast of turkey
- 5 tsp. vegetable oil, divided
- 1 Tbsp. lemon juice
- 1 clove garlic, crushed
- 3/4 tsp. chili powder
- 1/2 tsp. dried oregano leaves
- 1/2 large yellow bell pepper, cut into 1-inch pieces
- 8 strips green bell pepper
- 1 medium tomato, cut into 12 wedges
- 4 flour tortillas (7-inch diameter), warmed
- picante salsa
- Cut turkey into thin slices and then into strips about 3/4 inch wide.
- In medium bowl, combine 3 teaspoons of the oil, lemon juice, garlic, chili pepper and oregano.
- Add turkey and stir to coat.
- Let stand 1/2 hour.
- Heat remaining 2 teaspoons oil in large nonstick skillet over medium-high heat.
- Add yellow and green peppers; stir-fry 2 minutes.
- Add turkey strips and stir-fry another 3 minutes.
- Stir in tomato; heat 1 minute more.
- Serve immediately in tortillas with salsa.
- Serves 4.
