Turkey Fajitas

  1. Cut turkey into thin slices and then into strips about 3/4 inch wide.
  2. In medium bowl, combine 3 teaspoons of the oil, lemon juice, garlic, chili pepper and oregano.
  3. Add turkey and stir to coat.
  4. Let stand 1/2 hour.
  5. Heat remaining 2 teaspoons oil in large nonstick skillet over medium-high heat.
  6. Add yellow and green peppers; stir-fry 2 minutes.
  7. Add turkey strips and stir-fry another 3 minutes.
  8. Stir in tomato; heat 1 minute more.
  9. Serve immediately in tortillas with salsa.
  10. Serves 4.
