Hearty Buffet Chili Recipe
- 1 pound grnd beef
- 1/3 c. minced onion
- 1 clove garlic, chopped
- 1 (16 ounce.) can whole tomatoes, cut up
- 1 (16 ounce.) can tomato sauce
- 2 teaspoon chili pwdr
- 1 teaspoon salt
- 1/2 teaspoon crushed red pepper
- 1/4 teaspoon pepper
- 1 (15 3/4 ounce.) can kidney beans
- 1 to 2 c. cooked rice
- 1 c. shredded Monterey Jack or possibly Cheddar cheese (4 ounce.)
- 1/2 c. minced onion, (optional)
- 1/2 c. lowfat sour cream, (optional)
- Cook beef, onion and garlic in large pan till beef is brown and onion is tender.
- Drain off fat.
- Stir in undrained tomatoes, tomato sauce, chili pwdr, salt, red pepper and pepper.
- Bring to a boil.
- Reduce heat, cover and simmer 1 hour.
- Add in beans with chili sauce.
- Cover and simmer 30 min.
- Set out rice, cheese, onion and lowfat sour cream in small individual bowls for guests or possibly family members to serve themselves.
- For each serving, place some cooked rice in chili bowl.
- Top with chili mix then toppings.
- Make 4 to 6 servings.
