R L M's Ginger Ale
- 4 inches gingerroot, peeled & coarsely chopped
- 34 cup sugar
- 1 14 cups hot water
- 14 teaspoon lemon extract
- 34 liter cold sparkling water
- Place the peeled & chopped ginger root in a good blender along with the sugar.
- Add the hot water and cover.
- Blend on high for two minutes.
- Let the mixture rest for an hour.
- Filter the mixture, pressing with the back of a spoon through a sieve.
- Refrigerate liquid overnight in an air tight container.
- The next day add the lemon extract and stir gently to blend.
- Take two clean 1 liter bottles and divide the ginger liquid equally between them.
- Divide the sparkling water between the two bottles, gently shake.
- and store in your refrigerator until you are ready to drink.
