Green Banana Salad Recipe
- 15-20 green bananas
- 2 Italian peppers
- 1 med. sized onion
- 1/3 c. stuffed green olives
- 1/4 c. red vinegar
- 1/4 c. extra virgin olive oil
- 1/4 teaspoon black pepper
- Dash of salt
- Peel the green bananas and bring them to a boil in salted water till tender and you can pierce with a fork, yet not fall apart.
- (Note: green banana peel will stain your hands - rub hands with salt when you're through peeling step).
- While the bananas are boiling, slice the onion and peppers into thin slices.
- Chop the stuffed green olives.
- Place minced ingredients into a large bowl.
- Take green bananas and slice into rings of 1/4 inch thickness.
- Drop into bowl.
- Add in vinegar, extra virgin olive oil and black pepper.
- Blend well.
- Serves 4.
