Buttered Carrots with Granola
- 1 lb baby carrots
- 3/4 stick butter
- 1/2 cup brown sugar
- 1/2 cup honey
- 1 cup granola
- Cover carrots with cold water.
- Boil until carrots brighten in color, approximately ten minutes.
- Drain.
- Melt butter slowly in a saute pan.
- Add carrots and half the granola.
- Toss.
- Add brown sugar and honey.
- Toss.
- Garnish with crunchy granola for contrast in texture.
- Variations; Almonds, walnuts, hazelnut, pecan, maple, citrus zest, dried fruits
