Jumbo Pasta Shells
- 20 jumbo pasta shells
- 1 lb. fresh spinach
- 3 Tbsp. chopped onion
- 1 Tbsp. butter or oil
- 1 beaten egg
- 2/3 c. Ricotta cheese
- 1/2 c. Mozzarella cheese
- 1/2 c. shredded Parmesan cheese
- 1/8 tsp. ground nutmeg
- 1 jar spaghetti sauce
- In
- large
- saucepan, combine spinach in small amount of water. Cover
- and simmer 3 to 5 minutes; drain well.
- Chop up spinach and
- set
- aside.
- Cook chopped onion in butter or oil until tender, but not brown.
- Add spinach and heat thoroughly. Combine egg, 3 cheeses, nutmeg and spinach mixture.
- Stuff 20 cooked shells
- with
- filling.
- Pour
- 1/2
- spaghetti
- sauce in baking dish.
- Place filled shells on top.tour other half of sauce over shells and bake at 350u0b0 for 30 minutes.
