Cold Mulled Wine

  1. In a saucepan, combine the wine, orange slices, cloves, cinnamon sticks, star anise, bay leaf, and sugar and bring to a slow simmer over medium heat, stirring to dissolve the sugar.
  2. Simmer for a minute or two, then take off the heat, let cool a bit, and refrigerate.
  3. When cold, strain about 3 ounces (90 ml) into each glass, pouring it over a lot of ice.
  4. Add about 1 ounce (30 ml) brandy to each glass and top up with soda.
  5. If you have one of those nifty carbonation devices, run the wine through it.
  6. It will be even better.
