Sweet and Sour Fish
- 3 12 lbs pike (any fish will do) or 3 12 lbs pickerel, cleaned and scaled (any fish will do)
- water, just to cover
- 14 cup vinegar
- 12 teaspoon onion juice
- 1 teaspoon salt
- 4 gingersnaps
- 12 cup brown sugar
- 14 cup raisins
- 1 lemon, thinly sliced
- Cook fish in water seasoned with salt vinegar and onion.
- Drain and bone fish, reserving one cup of stock.
- Combine the remaining ingredients with the reserved stock and cook until thickened.
- Pour over boiled fish while hot.
- Serve cold.
