Make Krispy Kreme Doughnuts at Home
- 200 grams Bread flour
- 50 grams Cake flour
- 50 grams Katakuriko
- 30 grams Sugar
- 4 grams Salt
- 1 tsp Instant dry yeast
- 1 tsp Baking powder
- 190 ml 1 egg and milk
- 50 grams Shortening
- 1 fresh oil Frying oil
- 1 as much as you want Icing, melted chocolate, etc.
- If you make this in a bread machine, add all of the ingredients in the machine and stop after the first rising.
- If you are making this in a food processor, add in the dry ingredients first, and then the yeast.
- Next add the sugar, and pour the egg-milk mixture.
- Continuously run the food processor for 1.5 minutes.
- If you're using a food processor, take the dough out and for the first rising, put in a bowl and cover it with plastic wrap.
- It will take about 45 minutes at 104F (40C).
- Once the first rising is over, divide the dough into 16 portions, roll into balls and then let sit for 15 minutes.
- Once it's all done, press flat with your hands and make a hole in the center.
- You can also use a small cookie cutter to make the hole.
- On 12 cm squares of parchment paper, put them on an oven tray and arrange as shown for the second rising.
- Once again, let them sit for 45 minutes at 104F (40C).
- After it has risen, fry at 350F (180C) until both sides are golden brown!
- Be careful!
- If the heat is too low, they will absorb the oil and become too oily.
- While still hot, sprinkle some powdered sugar, or drizzle with icing or melted chocolate.
- Fluffy, chewy, melt-in-your-mouth fried foods are the best.
- If you chill them, all they need is 10 seconds in the microwave and they have that freshly baked taste again.
