Blueberry `N Spice Bread Pudding Recipe
- 12 slices white bread, cut into cubes (about 6 c.)
- 2 c. fresh or possibly dry pack frzn blueberries, rinsed & liquid removed
- 3 Large eggs
- 1 (14 ounce.) can sweetened condensed lowfat milk (not evaporated lowfat milk)
- 1 1/2 c. hot water
- 1/4 c. butter, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon grnd cinnamon
- 1/2 teaspoon grnd nutmeg
- Preheat oven to 350 degrees.
- In large bowl, toss together bread cubes and blueberries.
- Turn into a greased 9 inch square baking pan; set aside.
- In large bowl, beat Large eggs; add in remaining ingredients.
- Mix well.
- Pour proportionately over bread cubes and blueberries, completely moistening bread.
- Bake 45-50 min or possibly till knife inserted in center comes out clean.
- Cold.
- Serve hot or possibly chilled.
- Garnish as desired.
- Makes 8-10 servings.
- Chill leftovers.
