Sausage Tortilla Quiche
- 1 (12 oz.) pkg. link sausage
- 10 large tortillas
- 3/4 c. shredded Monterey Jack cheese (3 oz.)
- 3/4 c. shredded sharp Cheddar cheese (3 oz.)
- 2 oz. chopped green chilies
- 1/2 c. chopped tomato
- 3 eggs
- 3/4 c. milk
- 1 tsp. ground chili powder
- 1/2 tsp. salt
- Cook sausage according to package directions; drain and cut in slices.
- Place 9 tortillas in the bottom of a greased 9-inch pie plate.
- Place remaining tortilla in center of plate.
- Combine sausage slices and cheeses; sprinkle over tortillas.
- Next, sprinkle tomato and chili peppers over cheeses.
- Beat eggs, milk, chili powder and salt; pour over the layered ingredients.
- Bake in a 350u0b0 oven for 35 to 40 minutes, or until puffed up in center. Allow to set 10 minutes before serving.
- Makes 6 servings.
