Figgy in piggy
- 1 tbsp marjoram
- 1 tsp salt
- 1 tsp ground black pepper
- 2 1/2 lb pork loin
- 1 cup dried figs
- 2 tbsp butter
- 1 tbsp honey
- 1 pinch salt
- 1 tbsp coconut vinegar or any vinegar
- 2 cup water
- 1 medium fig
- Preheat oven 350 Fahrenheit
- Take dried figs put into a bowl add water.
- Rehydrate for 20 minutes.
- Take the figs out but save fig water.
- Take the pork loin take a straight knife push through center of the loin lengthwise.
- Push a handle of a big wooden spoon or chopsticks.
- Wallowing a bigger hole so figs will fit.

- Fill the hole with figs
- Mix the marjoram, salt and pepper.
- Rub on the outside of loin.
- Put in oveven roast for 1 hour.
- Take and reduce the fig water, with butter, 1 medium fig, vinegar, salt, and honey on the stove top.
- About 30-40 minutes
- Ten minutes before pork loin is done, add water reduction, put back into oven.
- When pork loin is done serve with dried fig water reduction.
