Fragrant Beef Stir-Fry

  1. Place cornstarch in small bowl.
  2. Gradually add broth, stirring until cornstarch dissolves.
  3. Mix in lemon juice and peel.
  4. Heat 2 teaspoons oil in large non-stick skillet over medium-high heat.
  5. Season beef with salt and generous amount of pepper.
  6. Add beef to skillet and stir-fry until just brown, about 3 minutes.
  7. Using slotted spoon, transfer beef to plate.
  8. Add remaining 2 teaspoons oil to skillet.
  9. Add vegetables; stir-fry until bright in color and just beginning to soften, about 3 minutes.
  10. Stir broth mixture quickly to re-blend; add to skillet.
  11. Add beef and any collected juices.
  12. Cook until sauce thickens and all vegetables are crisp-tender, stirring frequently, about 5 minutes.
  13. Transfer to bowl.
  14. Sprinkle with cilantro.
