Samson's Steamed Broccoli With Hollandaise Sauce Recipe

  1. Place water in bottom of steamer.
  2. Wash broccoli and steam about 15 to 20 min.
  3. Easy Hollandaise Sauce: Cream thoroughly 1/2 c. butter, gradually beat in 3 egg yolks, 1 1/2 Tbsp.
  4. lemon juice, salt, dash of paprika; blend well.
  5. Slowly stir in 1/4 c. boiling water.
  6. Place in top of double boiler.
  7. Cook over 1 1/2 c. boiling water 5 min, stirring constantly.
  8. Remove from heat; beat 1 minute.
  9. Makes 1 c..
