Samson's Steamed Broccoli With Hollandaise Sauce Recipe
- Fresh broccoli
- 1/2 c. butter
- 3 egg yolks
- 1 1/2 teaspoon lemon juice
- 1/2 teaspoon salt
- Dash of paprika
- Place water in bottom of steamer.
- Wash broccoli and steam about 15 to 20 min.
- Easy Hollandaise Sauce: Cream thoroughly 1/2 c. butter, gradually beat in 3 egg yolks, 1 1/2 Tbsp.
- lemon juice, salt, dash of paprika; blend well.
- Slowly stir in 1/4 c. boiling water.
- Place in top of double boiler.
- Cook over 1 1/2 c. boiling water 5 min, stirring constantly.
- Remove from heat; beat 1 minute.
- Makes 1 c..
