Elva'S Captain'S Soup
- 1 Tbsp. oil or margarine
- 1 medium onion, chopped
- 1 lb. ground beef
- 5 or 6 fresh mushrooms, sliced
- 1 (24 oz.) can V-8 juice
- 1 can cream of celery soup (undiluted)
- 1 can cream of mushroom soup (undiluted)
- 1 large potato, diced
- 1 (10 oz.) box frozen mixed vegetables
- 1 tsp. Worcestershire sauce
- 1 pinch dried sweetened basil
- pinch dried thyme
- Cook chopped onion in oil or margarine in large pan until soft.
- Add beef and mushrooms.
- Cook, stirring until all pink has left meat.
- Add three cans and stir until smooth.
- Add frozen vegetables, potato and seasonings.
- Bring to boil and simmer for 1/2 hour, stirring occasionally.
- Serve as main dish with fresh bread.
- Enjoy!
