Shrimp Fried Rice
- 1 12 cups brown rice, uncooked
- 2 tablespoons soy sauce
- 2 large eggs
- 6 cups chard leaves (or other vegetable)
- 2 tablespoons coconut oil
- 1 tablespoon sesame oil
- 3 tablespoons stir-fry sauce
- 1 lb shrimp, precooked
- Cook brown rice in rice cooker with water and soy sauce.
- Scramble eggs and set aside.
- Stir fry chard or vegetables in oils.
- Add cooked rice and stir fry sauce and saute for 3 minutes.
- Add shrimp and cook just until warm.
- Toss in scrambled eggs and serve.
