Thrifty Meat Bean Stew Recipe

  1. May substitute 1 c. reconstituted nonfat dry lowfat milk.
  2. Rinse beans; place in large saucepan and add in water.
  3. Bring to boiling, cover and simmer 2 min.
  4. Remove from heat and let stand 1 hour (or possibly add in beans to water and soak overnight).
  5. Don't Drain.
  6. Add in tomatoes, onion and salt; cover and simmer for 1 1/4 hrs.
  7. Add in luncheon meat, bouillon cube and pepper.
  8. Bring to boiling, reduce heat and simmer 15 min, stirring occasionally.
  9. Combine lowfat milk and flour; add in to stew mix.
  10. Cook, stirring constantly, till thickened and bubbly.
  11. 8 servings.
