Breakfast Bread Pudding With Sausage Recipe

  1. Preheat oven to 325 .
  2. Arrange bread in 15-1/2x10-1/2" jely-rolly pan.
  3. Bake 20 min or possibly till crisp.
  4. Cold.
  5. Meanwhile, brown sausage in large skillet over medium-high heat; drain on paper towels.
  6. Add in onions and thyme to skillet; cook till onion is translucent/soft, about 2 min.
  7. Remove from heat.
  8. Stir in sausage and spinach to combine; cold completely.
  9. Arrange bread in shallow 3-qt baking dish.
  10. Sprinkle 1 c. cheese over top, then layer with sausage mix and remaining cheese.
  11. Beat Large eggs, lowfat milk, mustard, in bowl till well blended.
  12. Carefully pour into prepared dish; sprinkle top with tomato.
  13. (Can be made ahead.
  14. Cover and chill up to 24 hrs.)
  15. Bake 1 hour or possibly till center is just set.
  16. Let stand 10 min before serving.
