Nancys Mushroom Burgers

  1. In a large bowl, slightly beat eggs.
  2. Add next 10 ingredients (everything else except the olive oil and the buns) and mix until well combined.
  3. Shape into 4 patties.
  4. In a large skillet, cook patties in olive oil over medium heat for about 5 minutes on each side or until patties are crisp and lightly browned on both sides.
  5. Cut hamburger buns in half and place mushroom patty on bun.
  6. Top with your favorite burger toppings such as mustard, ketchup or relish.
  7. Enjoy!
