Chicken Tetrazzini
- 1 1/2 to 2 c. cooked, diced chicken
- 1 1/2 c. noodles
- 1 1/2 c. diced celery
- 1 Tbsp. diced green pepper
- 1/2 c. chopped onion
- 1 Tbsp. chopped parsley
- 3 c. chicken broth
- 1/2 can cooked tomatoes, drained
- salt and pepper to taste
- 3/4 c. shredded sharp cheese
- 2 Tbsp. bread crumbs
- 1/2 can mushroom soup
- 1 clove garlic, minced
- Dice cooked chicken.
- Cook noodles, diced celery, green pepper, chopped onion, minced garlic and chopped parsley in chicken broth.
- Combine chicken, noodles, vegetable mixture, mushroom soup, drained tomatoes, salt and pepper.
- Add shredded cheese and bread crumbs.
- Put in large casserole dish and top with cheese and crumbs.
- Bake at 300u0b0 until lightly browned, about 30 minutes.
- Serves 8.
