Melted Swiss Cheese with Vegetables

  1. Preheat oven to 350F.
  2. Cook potatoes in large pot of boiling salted water 8 minutes.
  3. Add carrots and boil 7 minutes.
  4. Add broccoli and boil until all vegetables are tender, about 3 minutes longer.
  5. Drain vegetables.
  6. Arrange potatoes, carrots, broccoli, bell peppers, beets and onions on large platter.
  7. Place bread in basket.
  8. Divide sliced cheese among 6 ovenproof plates.
  9. Bake until cheese melts and bubbles, about 10 minutes.
  10. Serve with vegetables and bread.
