Strawberry Kuchen
- 1 1/2 cups cake flour
- 1/2 cup plus 1 1/2-2 teaspoons sugar
- 2 teaspoons baking powder
- 2 egg whites
- 2 tablespoons skim milk
- 1/2 cup applesauce
- Grated rind of 1 lemon
- 2 cups diced strawberries
- 1 tablespoon dark-brown sugar
- 1/2 teaspoon ground cinnamon
- Preheat oven to 400 degrees.
- Spray a 9-by-9-inch-square pan with nonstick cooking spray.
- Combine flour, 1/2 cup sugar and baking powder.
- In large bowl whisk egg whites and milk.
- Stir in applesauce and lemon rind.
- Add flour mixture and stir to moisten dry ingredients.
- Do not overmix.
- Spoon batter into pan and top with strawberries.
- Mix remaining 1 1/2-2 teaspoons granulated sugar with brown sugar and cinnamon and sprinkle over strawberries.
- Bake about 30 minutes.
- Remove from oven and place on wire rack to cool.
- Serve warm or at room temperature.
