Dynasty Duckling Pizza Imperiale(Makes About 16 Servings)
- 4 c. cooked rice
- 1/2 c. ground pecans or hazelnuts
- 1 egg, beaten
- 2 1/2 c. (20 oz.) shredded Swiss cheese, divided
- 1/2 c. grated Parmesan cheese, divided
- 2 Tbsp. olive oil
- 1 whole Concord Farms duck breast, halved, boned, skinned and cut into bite size pieces
- 1 small sweet onion, cut into thin rings
- 1 small green pepper, cut into thin rings
- 1 small red pepper, cut into thin rings
- 4 oz. fresh mushroom caps, thinly sliced
- 1/2 c. pitted ripe olives, sliced
- 1 1/3 c. pizza sauce
- 1 tsp. each Italian seasoning, fresh chopped mint and fresh chopped basil
- Preheat the oven to 375u0b0.
- Combine rice, pecans, egg, 1/2 cup of the Swiss cheese and 1/4 cup of the Parmesan cheese in a large bowl. Grease a 12-inch pizza pan.
- Evenly press rice mixture onto bottom and up side of pan to create a 1/2-inch rim. Bake 10 to 12 minutes.
- Set aside to cool.
