Appetizer Cheesecake

  1. Combine the tortilla chips and butter and press in the bottom of a 9-inch spring-form pan.
  2. Bake for 15 minutes.
  3. Meanwhile, place the cottage cheese in a blender or food processor.
  4. Cover and process on high speed until smooth.
  5. In a large bowl of an electric mixer, combine the cottage cheese and cream cheese, mixing at medium speed until well blended.
  6. Add the eggs, one at a time, mixing well after each addition.
  7. Blend in Cheddar cheese and chiles.
  8. Pour the mixture over the baked crust.
  9. Return the pan to the oven and bake for 1 hour.
