Apple Harvest Cake Recipe
- 1 1/4 c. Flour
- 1 c. Whole wheat flour
- 1 c. Sugar
- 3/4 c. Brown sugar, packed
- 1 Tbsp. Cinnamon
- 2 tsp Baking pwdr
- 1 tsp Salt
- 1/2 tsp Baking soda
- 3/4 c. Veg. oil
- 1 tsp Vanilla
- 3 x Large eggs
- 2 c. Apples, finely minced
- 1 c. Minced walnuts
- 1/2 c. Confectioner's sugar, sifted
- 1/4 tsp Vanilla
- 2 tsp Lowfat milk
- Generously grease and flour a 10-inch fluted tube pan;set aside.
- In a large mixing bowl combine the flours, sugars, cinnamon, baking pwdr, salt and baking soda.
- Add in oil, vanilla and the Large eggs, beat till well mixed.
- Stir in the minced apples and walnuts.
- Spoon batter proportionately into prepared pan.
- Bake in a 350 F oven for 45-50 min, or possibly till cake tests done.
- Cold in pan 12 min; invert cake onto a wire rack.
- Cold thoroughly.
- Drizzle top with powdered sugar glaze, or possibly dollops servings with sweetened whipped cream
- Powdered Sugar Glaze: In a small mixing bowl, stir together powdered sugar, vanilla and sufficient lowfat milk to make of drizzling consistency.
- Drizzle over cooled cake.
