Moroccan Style Fish With Spinach
- 4 tablespoons extra virgin olive oil
- 4 tablespoons lemon juice
- 4 -6 scallions, finely chopped (spring onions)
- 4 tablespoons chopped fresh parsley
- 2 teaspoons chopped fresh cilantro (coriander leaves)
- 2 teaspoons paprika
- 1 teaspoon ground cumin
- 14 teaspoon cayenne (to taste)
- 1 lemon, zest of
- salt
- 4 (6 ounce) fish fillets
- 3 tablespoons olive oil
- 1 12 lbs potatoes, sliced
- 1 onion, chopped
- 2 -4 garlic cloves, chopped
- 4 -6 tomatoes, chopped
- 1 lb fresh spinach, chopped
- lemon wedges (to garnish) or lime wedge (to garnish)
- Combine the ingredients for the charmoula.
- Place the fish fillets in a large bowl or plastic bag and cover with the charmoula.
- Marinate refrigerated for 1 to 3 hours.
- Heat the oil in a large heavy pot and saute the potatoes, stirring occasionally, until lightly browned, 10 to 15 minutes.
- Add the onion, garlic, and tomatoes and cook until the onion is tender, about 5 minutes.
- Add the spinach and stir to combine.
- Place the fish fillets on top of the vegetables and pour the marinade over the fish.
- Cook tightly covered over medium-low heat until the fish is firm and opaque, 15 to 20 minutes.
